Bite. Sized. Breakfast. Thank you Bakerella for this amazing idea! I pinned this recipe on pinterest and the description read "puffin", which made sense because they are mini muffins sized pancakes. However, the problem with this name mashup is that there are actually birds named Puffins and when you're talking about having Puffins for breakfast without visual evidence people think you are insane. Who in their right mind would want to eat an adorable puffin?
After you try these puffins and you start telling all of your friends about the best bite sized pancakes you had for brunch, remember to start off by explaining that you aren't a heartless bird killer and rather a lover of pancakes made in a mini muffin pan.
What you need:
3/4 cup all purpose flour
3/4 cup whole wheat flour
3 tbs. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 cup buttermilk
2 tbs. vanilla extract
1 large egg
1 egg white
blueberries, strawberries, chocolate chips
What you do:
- Preheat the oven to 350 degrees and spray mini muffin pan with cooking spray.
- Make the pancake batter: mix all of the dry ingredients (flours, sugar, baking powder and salt) in a medium bowl. Mix all of the wet ingredients (buttermilk, vanilla and eggs) in another medium bowl. Whisk the dry ingredients into the wet and stir until sort of smooth (there will be a few lumps).
- Fill the mini muffin pan with pancake batter a little over half full and then add in your desired mix-ins.
- Bake for 8 to 9 minutes.
For the first batch Jamie and I tried Puffins with blueberries, strawberries and chocolate chips and then it occurred to me puffins were a prime Nutella opportunity. I made another batch of Puffins sans mix ins and we topped those bad boys with a dollop of Nutella and strawberry. Amazing.
