Breakfast Chronicles: Egg White Scramble



Spinach for breakfast?!?  YES!  This is one of my favorite breakfasts to make on mornings when I have a whole lot of time weekends.  It's low calorie, high protein and you get your first vegetable of the day in early.    If I need to eat on the go I'll throw this scramble in a whole wheat tortilla and take my wrap with me.



Ingredients:
1/4 cup egg whites
2 turkey sausage links, cooked and diced.
large handful of baby spinach
reduced fat shredded cheese
salt and pepper to taste
cooking spray

What you do:
Spray your frying pan with cooking spray and heat over medium high heat.  Pour in the egg whites, salt and pepper. Let the eggs cook for about 30 seconds before adding the spinach. Scramble all of that together letting the spinach down.   While the eggs are cooking, microwave the sausage links for a minute and then cut into bite sized pieces. By the time you finish with the sausage, the eggs should be mostly done so go ahead  and toss it in the pan and sprinkle with cheese letting the cheese melt.
