Chris' Chili Dogs with Blue Cheese Slaw


I just got back from a wonderful 6 days in Charleston hanging out with some cute kiddos, soaking up the sun, taking my first tennis lesson and just enjoying family.  Of course while I was down there I had some pretty good food.  Out of all of the food (and I hate to admit there was a lot),  these hotdogs were the clear winner.
Using high quality ingredients, Chris' hotdog brain child was literally the best hot dog that I've ever had at home. Period.   I tried to follow him around the kitchen and document everything that happened but there were some cute kids vying for my attention and they are so stinking cute that I couldn't help myself.  Needless to say that I have no exact measurements for anything. If you're looking for a recipe I am sorry to say that I can't help you. What I can share is that there are two parts to these hot dogs:  the blue cheese slaw and the homemade chili.  I don't have any pictures of the chili making process, I do know that the chili has ground beef, diced green peppers and onions.  After that I got nothing.  I may have been playing Angry Birds while the chili was being made.  I won't apologize because the 5 year old taught me a lot of tricks to beat those levels that I just couldn't get past for the longest time.   In summary, just use your favorite chili recipe.



Quality hotdogs are still connected to each other.  Who knew?

A regular hotdog bun isn't going to hold all of that chili/slaw goodness. 
Base ingredients for the blue cheese dressing.  Chris also added a little mayo and some spices. . 
Seriously, look at this cuteness and tell me if you could stay focused on coleslaw: 
 Right, so back to the coleslaw.  It was really savory instead of sweet and balanced the sweetness of the best 'specialty' mustard I've ever come across.

Chris served these hotdogs with homemade crinkle cut fries. You can buy the Pampered Chef Crinkle Cutter here.  It is fun to use, I swear.  All you do is peel your potato and use the cutter like a knife and you get beautiful handcut fries. You can even make waffle fries if you cut the potatoes a certain way. I can't wait to try that out on some sweet potatoes.


Don't have a deep fryer at home?  I don't and neither does Chris.  He just used a large stock pot that he filled quarter of the way with oil.  Over medium heat he let the oil get hot, but not too hot before he dropped the fries in and let them fry until they were crispy.   They were pretty danged good.
