Chocolate +Peppermint = amazing holiday cookie! My favorite ice cream is mint chocolate chip and I love the mocha peppermint latte that Starbucks rolls out at Christmastime. I was in the grocery store buying ingredients for other cookies when I came across a bag of Mint Chocolate M&M's. I immediately thought, those would be great in a cookie and the rest was history!
Ingredients:
1 cup of butter
1 3/4 cup sugar
2 1/2 cups all purpose flour
2 eggs
1/2 cup cocoa powder
1/4 tsp. salt
1 tsp. baking powder
1 12 oz bag of chocolate chips
1 bag of Mint Chocolate M&Ms
2 tsp. Peppermint Extract
Instructions:
Preheat oven to 350 degrees.
In large bowl combine butter and sugar. Add in the eggs and peppermint extract. Finally incorporate your cocoa powder. In a separate bowl combine the flour, baking powder and salt. Add the flour mixture to the butter/sugar/egg mixture.
Fold in your chocolate chips.
For these cookies I lined my baking sheets with parchment paper because there was so much chocolate that I wanted to make certain they didn't get stuck on the pan. I used my cookie scoop to get uniformed sized cookies. After they were all on the pan I pressed in the M&Ms on the tops of each cookie.
Bake for 10-12 minutes or until the cookies are set.
These smell soo good! I put them in a separate container away from the left over gingerbread cookies because peppermint cookies have a way of making everything else taste like peppermint.
These cookies are so moist in the middle. Even after they cooled down the center was perfectly cake-like. Yum!
